It’s so fun this time of year to introduce pumpkin into everyday year ’round recipes and give them the unique flavor of fall.
I fell in love with this simple pumpkin spice granola recipe, and couldn’t wait to share it with you. This home-baked cereal makes a great seasonal breakfast item or just a quick snack on the go. I hope you give this recipe a try and add it to your list of fall recipes this season.
Simple Pumpkin Spice Granola
Here is what you will need…
- 4 1/2 cups of oats
- 1 cup of mixed nuts of your choice
- 1 cup of pumpkin seeds
- 1/4 teaspoon of nutmeg
- 2 teaspoons of ground cinnamon
- 1 cup of pumpkin puree (or canned pumpkin)
- 1/2 cup of pure maple syrup
- 1/4 cup oil
- 1 teaspoon of vanilla or almond extract
- 1 cup of sweetened dried cranberries
You can adapt these ingredients and add and delete any items to your personal tastebuds. You could omit the cranberries and add raisins or dried cherries. Or even change around the nuts and try different combos. Have some fun experimenting, because granola is one of those no-fail kinds of recipes where you can make it your own and really can’t go wrong.
Granola Baking Directions
Preheat your oven to 300 degrees F. Grease two baking sheets or place parchment paper on them and set aside.
Mix together the oats, mixed nuts, pumpkin seeds and spices in a large bowl. Using a whisk and another bowl mix together the maple syrup, pumpkin puree, and vanilla or almond extract.
After you take the pans out of the oven mix in 1/2 of cranberries to each one. Allow the granola to thoroughly cool. Break into small pieces. Store in an airtight container. Ideal eaten just as is, or great added to yogurt or ice cream to give them some crunch. You can also change up this recipe by varying the types of nuts or adding flax seeds to the ingredients.
